Emerging strategies to improve the

 potential of spent brewer yeast proteins

Expected results

To obtain peptides/protein extracts from brewer's yeasts with increased functionality by combining lyses procedures with emerging processing techniques.
To develop peptide/protein - carbohydrate conjugates embedded with anthocyanins that will be further used for creating sustainable functional ingredients for food industry.
